每次在mid-valley薇萱会叫我买dorayaki给她吃,一个要RM2,蛮贵的。后来艺敦和铎敦又叫我买给他们吃。因此,我便想自己做给他们吃,结果看似容易,还是失败3次。pancake的味道,我不太满意,因为honey的味道我不喜欢,不知是牌子问题吗.红豆却有点硬,要再蒸熟点,而且有点干。Nutella的当然比较好吃。我想我会到MId-valley哪儿买一个来吃看看。

Ingredients: (2-3 pieces)
1 egg
45g cake flour
40g brown sugar
1/4 tsp baking soda + 1 tbsp water
1 tsp honey + 1 tbsp water
~3 tbsp nutella or ~3 tbsp red bean bean paste
cooking oil for pan frying
Method:
1。Beat egg until become frothy and add sugar. Whisk to dissolve.
2。Dissolve baking soda and dilute honey with water. Add them in the egg mixture.
3。Sieve in cake flour. Mix the wet and dry ingredients with a spatula but do not over-mix; break up any lumps by pressing them against the side of mixing bowl.
4。Cover bowl with a cling film, let the mixture rest for about 30 minutes.
5。Heat skillet over low heat, spray (or brush) a barely visible layer of oil on it. Ladle batter (slightly more than 1 table spoon) onto skillet. Flip pancakes after bubbles rise, about one minute and a half, and the bottom is golden brown. Fry the other side for another half minute or until done (the second side will not be evenly browned as the first due to the bubbles).
6。Repeat with the remaining batter; brush oil on skillet if required.
7。Sandwich two patties with nutella or red bean bean paste. Serve warm. If not consume immediately, seal or wrap the dorayaki to prevent it from turning dry.

RECIPE:
-Use a hand whisker instead of an electric whisker/blender as overmixing will achieve poor results!
Respect the order of the ingredients!

-Add half of flour and mix well.

-Add water and mix. The amount of water might vary with the kind of flour.

-Heat a frypan over a medium fire first.

Once the frypan has cooled down bring over the fire again.
Wipe it with a kitchen paper soaked with salad oil.
Wipe off excess oil if necessary.

-Pour pancake mixture. Bear in mind that the size of the pancakes must
be the same. The amount, whatever it is must be the same. Choose your
ladle/spoon well beforehand!
-Cover with lid.
-When bubbles have appeared across the surface turn the pancake over.
-The very minimum of oil will guarantee an even cooking!
-Too much oil and your pancake will have that look!
Sandwich sweetmeats/anko between two pancakes and serve hot.
Once cooled down you may deep-freeze them wrapped in cellophane paper.
