Day 5 bakery : Onion and herb foccasia bread


Ingredients:

高筋面粉                          100                       250

配料:
fresh onion                            5                         12
mix herb                              0.3                        1
mix spice                             0.3                         1
olive slice (optional)            10                         1

分割每粒面团分量: 150g

做法:
1。把以上全部材料包括水掺一起搅拌,直到面团拉开成簿及半透明。

2。基本发 酵1小时。面团卷起动作可以看pita pocket bread


3。第一次发酵后,做翻面动作(拉长面团,折3褶,翻面,再第二次折3褶)视频请看这里。然后发酵30mins。

4。分割每个150g,然后滚圆。这面团比较大,所以用两只手来滚圆。然后松弛30mins。

5。整形;用棍子擀成圆形。然后铺上配料;先撒herbs,三匹册,然后olive oil(这里没有olive 送礼册,所以用olive oil),最后onion。
 


6。然后做最后发酵45-60mins。烘15-20mins,180‘C。

7。烘好后,在面包上撒盐及橄榄油,味道比较好。
